Herb Crusted Salmon

Ingredients

  • 2 salmon fillets (6oz each)
  • 1 heaping tablespoon coconut flour
  • 2 t fresh parsley (or dried, if you have on hand)
  • 1 T olive oil
  • 1 T Dijon mustard
  • salt and pepper, to taste (I like about 1/4 t each)

Instructions

  1. Preheat oven to 450 degrees
  2. Mix the oil and Dijon together then top off your salmon with it. A nice even spread does the trick
  3. In a small bowl, mix together your coconut flour, parsley, and salt and pepper
  4. Use a spoon to sprinkle on your toppings on your salmon and then your hand to pat into your salmon
  5. Place in oven for 10-15 minutes or until salmon is cooked to your preference. I cook mine more on the medium rare side at 12 minutes

Cooking Tips

  • Use any kind of salmon you want. We like wild caught sockeye salmon. It’s yummy and worth the price for a good meal. I’ve made this with up to 1 pound of salmon and it’s been just fine
  • Experiment with herbs. I’ve prepared this with Herb de Provence and it’s been fantastic.
  • Slice up a lemon and squeeze it all over before serving for a nice citrus finish
